Our Wagyu beef cattle raised by Mr. Ito of Davos Farm in Sugadaira Kogen in Shinshu is a rare find that does not circulate in the market, available only for a small group of chefs handpicked by Mr. Ito. Out of the four breeds of Wagyu beef, Japanese Shorthorn is known for its leanness and flavor, and Japanese Black for its melt-in-the-mouth marbling. Mr. Ito’s Wagyu beef cattle in Davos Farm are natural crossbreeds that combine the best characteristics of Japanese Shorthorn Wagyu and Japanese Black Wagyu.
The Wagyu cattle are fed pesticide-free grass and fermented feeds made of apple and grape lees and tofu refuse, and grow up free of hormones and antibiotics. The cattle graze stress-free in a vast pasture to develop into natural organic meat. Our meats mainly come from mother cows rather than young heifers. We strive to provide lean and flavorful beef like Black Angus with a touch of rich and sweet marbling of Japanese Black Wagyu in one.
